Ingredients

  • 2 1/2 lb ground beef (you can use part ground turkey)

  • 1/2 c flour

  • 1/2 c fine dry bread crumbs

  • 2 Tbsp grated onion

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

  • 3 eggs, slightly beaten

  • 1 1/2 c low-fat or skim milk

  • 4 leeks, trimmed and parboiled

  • 1/2 lb Havarti cheese, cut into sticks about 1 1/2 inch long and 1/2 inch thick

Directions

  • In a large mixing bowl, combine beef, flour, bread crumbs, onion, salt and pepper.
  • Mix together with a wooden spoon.
  • Add eggs, then add milk 1/2 c at a time, letting mixture rest a few minutes between additions so et absorbs all the milk. (this gives the meatloaf a light texture)
  • When all the milk is added and absorbed, beat with spoon a few minutes until mixture is almost fluffy.
  • Place half in a greased baking dish.
  • Slice leeks lengthwise and lay on top of meat.
  • Arrange cheese sticks on top of the leeks
  • Cover with remaining meat mixture.
  • Shape and smooth into a loaf shape.
  • Bake at 375°F for 1 hour.

We lave this meatloaf because of the leeks in the middle, Reinhard grows enormous ones in his garden.
