Meatloaf Denmark

2 1/2 lb ground beef (you can use part ground turkey)
1/2 c flour
1/2 c fine dry bread crumbs
2 Tbsp grated onion
1 1/2 tsp salt
1/2 tsp pepper
3 eggs, slightly beaten
1 1/2 c low-fat or skim milk
4 leeks, trimmed and parboiled
1/2 lb Havarti cheese, cut into sticks about 1 1/2 inch long and 1/2 inch thick
Directions
- In a large mixing bowl, combine beef, flour, bread crumbs, onion, salt and pepper.
- Mix together with a wooden spoon.
- Add eggs, then add milk 1/2 c at a time, letting mixture rest a few minutes between additions so et absorbs all the milk. (this gives the meatloaf a light texture)
- When all the milk is added and absorbed, beat with spoon a few minutes until mixture is almost fluffy.
- Place half in a greased baking dish.
- Slice leeks lengthwise and lay on top of meat.
- Arrange cheese sticks on top of the leeks
- Cover with remaining meat mixture.
- Shape and smooth into a loaf shape.
- Bake at 375
°
F for 1 hour.
We lave this meatloaf because of the leeks in the middle, Reinhard grows enormous ones in his garden.
