Ingredients

  • 1-2 Lb lamb roast, cut in cubes

  • 2 Tbsp olive oil

  • 1-2 onions, chopped

  • beef or chicken broth (we like part dry vermouth)

  • 1/2 to 1 tsp allspice

  • salt and pepper to taste

  • pinch of chili pepper (optional)

  • 1 white cabbage, sliced

Directions

  • In a large heavy pot with a cover, brown lamb in oil, then cook down until all liquid is gone.
  • Add onions and garlic and saute until onions are lightly browned.
  • Add broth to cover, seasonings and cabbage.
  • Cook until cabbage wilts, then cover and simmer about 1 1/2 hour (20 min in pressure cooker), until lamb is tender.

This recipe from Reinhard and Kate’s old friend Jens Eckhardt of Hamburg, Germany, is very good with garlic mashed potatoes.
